I’m very pleased to announce that I am launching a business in Ottawa, called, you guessed it, ADAM BAKES.
As you know, I’ve worked in historic hotels, private dining clubs, restaurants and bakeries in Ottawa and across Canada. Now, I’m pleased to start my own business and to bring unique pastries to you!
I’ve always loved those beautiful old molds you find at garage sales and flea markets, so I’m using this as a way to help describe my business. I want to offer desserts that require special molds or skills, ones that you wouldn’t typically make at home.
I’m going to start with the hardest thing a pastry chef can make—cannelés! And let me tell you, I’ve been practicing and perfecting this recipe for months. I’m offering traditional rum flavoured, using North of 7 Distillery‘s local rum. I’m also going to offer some fun feature flavors like birthday cake and Hummingbird Oh Mama! chocolate dipped. I also use local beeswax from Heavenly Honey to grease the special copper molds.
